So I get asked all the time “Leanne, what does a super amazing health coach like you drink in the morning?” Actually no, that never happened…but if it did, this would be my answer: ‘Well, I drink a gut healing, tummy filling, skin smoothing, no sugar, anti-inflammatory, stress-busting, super anti-oxidant latte that tastes better than Starbucks!’
This drink has been a slow evolution over several years now since I gave up my 2-3 pot of coffee/day habit. I used to really like Starbucks’ matcha latte…but since it’s full of sugar, I have been making my own version. Lately there has been this big movement towards the buttery Bulletproof coffee….so I thought I would experiment with making something similar with my green tea…..and OMG wow!!
I want to briefly list some of the amazing benefits from this drink:
Matcha: Firstly if you have never heard of matcha, it is simply a high quality, shade grown green tea that is dried and ground up into a powder to be mixed directly in hot water (rather than tea leaves in a tea bag). It is full of polyphenols and has the highest amount of the anti-oxidant EGCG of all green teas – by a mile. It provides a sustained gentle energy boost (rather than a spike – and crash – like coffee) and research shows that it can boost your immune system, help with type-2 diabetes, improve cardiovascular health, detoxify the blood, improve mental alertness, reduce stress and so much more!
Grassfed Ghee: Ghee is simply clarified butter with the milk solids removed, leaving you with an end product that is free from casein and lactose, so it’s generally suitable for those with sensitivities. Ghee contains butyrate, an essential short-chain fatty acid that acts as a detoxifier and improves gut health. It’s been shown to support healthy insulin levels, is an anti-inflammatory, and may be helpful for individuals suffering from IBS, Crohn’s disease and ulcerative colitis. It’s a great source of fat soluble vitamins A, D, E and K and if using grassfed ghee you will receive a good dose of CLA which research is suggesting may reduce tumours, cholesterol, inflammation and blood pressure.
Collagen: Collagen is the most abundant protein found in our bodies; as we age we produce less and less of it, so if we want to keep our insides and outsides working (and looking!) their best, then supplementing with collagen is a must. Collagen helps your skin look younger, reduces joint pain and degeneration, helps heal leaky gut and other gastrointestinal disorders, can help increase muscle mass and energy, strengthens hair and nails, and helps improve liver and cardiovascular health.
In addition to all these great health benefits, both the collagen and the ghee contribute to a sense of fullness so in case I don’t have time, or don’t feel like having breakfast, I know that I’m packing in enough nutrients to get me through my morning.
Now depending on whether you have a glass or plastic pitcher for your blender (I have the most amazing stainless one, but it nearly cost me my first born!) will determine how you make your drink since I don’t recommend pouring hot liquids into plastic anything. If yours is plastic (or holds less than 1.5L) then simply blend all of your ingredients prior to heating (except maybe your milk if you want to use that to cool it a bit), or if you have a large glass or stainless pitcher then simply boil your water first and while holding down the lid, carefully blend everything just prior to drinking.

- 2 c filtered water
- 2 tsp good quality pure matcha powder (like this one)
- 1.5 tbsp grassfed collagen hydrosylate powder (this is my favourite)
- 2 tsp Frontier non-alcoholic vanilla extract
- 1 tbsp grassfed ghee (this is best I've found for taste and price)
- ½ c milk of choice
- optional: liquid stevia, to taste
- Blend all ingredients first (you can leave milk until just before serving if you want to use it to help cool drink) until frothy. Heat to just barely boiling and serve.
- Boil water then add to blender with all remaining ingredients and, while carefully holding down the lid, blend until frothy. Serve immediately.
