Why I Love Mixed Vegetable Recipe
Since we only eat vegetables due to our vegetarian lifestyle. Recipes that can be adapted to the ingredients you have on hand are my absolute favorite. Following a week of cooking, I often have random scraps of many different vegetables, but no real strategy on how to use them. When it occurs, I make this dish. This mixed veg recipe is very adaptable, so feel free to add whichever veggies you want or have on hand. No worries if you just have frozen vegetables on hand. This mixed veggie meal would also be delicious with paneer. The fact that the veggies are cooked just in their own juices is a bonus. The additional time spent in the kitchen is definitely worth the delicious end product.
Vegetable curry with steaming rice is another option. This curry is easy to make, however it may take some time to simmer. The only things you’ll need are some fresh vegetables, a few crucial spices, and some time. One-pot meals are not only convenient but also make cleanup a breeze.
Last but not least, although I like to add some cream to this vegetable curry to make it a bit richer, you can simply skip the cream or use coconut cream to make this an entirely vegan recipe.
Now that you know what makes my mixed vegetable curry so special, let’s get started making it!

Which vegetables work best in a mixed vegetable Recipe?
For this curry, I usually use hearty vegetables like potatoes, cauliflower, beans, carrots, Broccoli, Brussels sprouts, and green peas. Therefore, any available veggies will do. Just remember to add the veggies in the order of how long they need to cook. Vegetables that take longer to cook, like cauliflower and potatoes, should be added earlier in the cooking process, while leafy greens like spinach can be used in the last moments.
